Dulce De Leche and Strawberry Popsicles

She always ordered blue raspberry. I always ordered green apple.

It was the summer of 2008. Despite it being impossibly steaming hot and beyond sunny, my friend’s grandmother took us nearly every day to this huge park full of children, monkeys, and geese. It was like heaven for our 8 year old minds. We ran around the playground while her poor grandmother sat under the shade watching us play for hours on end, never really thinking about how hot it actually was. By the end of the day, our hair stood on the end from sliding down too many slides, our shoes were filed with mulch from the playground, and we were really really hot (and tired which I think was the goal…).

We never really looked at the monkeys -they looked pretty similar to us.

Across the street from the playground was a snow cone stand. It looked pretty unassuming too, right next to a closed ice cream joint, rustic and cold. Being the formidable grandmother she is, my friend’s grandmother always took us to the snow cone stand to buy something cold and fresh. My friend loved the blue raspberry, darker than night and wonderfully creative. I always ordered green apple; I liked the bright green that was more enchanting than grass and of course, I appreciated the fact that it tasted nothing like apple.

After our hands became sticky with a mixture of syrup and ice, our tongues blue and green, and our paper cones scraped clean, we went straight back to seeing who could catch the butterfly and fly down the slide the fastest.

These dulce de leche and strawberry popsicles remind me of that summer -among the best I’ve ever had -happy and blissfully carefree. They are milky (think condensed milk), caramelized, and impossibly refreshing on a hot day. Dipped in a thin shell of chocolate, they are impossible to resist.

// To make dulce de leche, you can make it from milk, or shimmer a can of sweetened condensed milk in a pot of water (make sure the can is COMPLETELY COVERED in water or else it will explode, no joke) for 3 hours (2.5 if you want a lighter dulce de leche).


Dulce De Leche and Strawberry Popsicles


  • 1 cup milk
  • 1/2 cup dulce de leche
  • 6- ish strawberries sliced or cut in half


  1. In a bowl, combine dulce de leche and about 1/4 of the milk. Mix thoroughly and gradually add in the rest of the milk.
  2. Place strawberries in 6 popsicle molds (or how many ever popsicle molds the liquid mixture fills).
  3. Pour in the dulce de leche mixture and freeze for around 3 hours.
  4. Stick popsicle sticks into the semi-frozen popsicles.
  5. Freeze until solid.

    This is a sophisticated version of a classic summer treat! I love that you included the chocolate shell (chocolate makes everything better). Anytime I go to a snow cone place I always get the strawberry flavor. I never change my order!

    I think I have found the perfect recipe for my upcoming frozen treats potluck (a yearly tradition in which everyone brings one frozen dessert to share, we eat frozen treats & watch movies all night) šŸ™‚

      Thank you Hira! I totally agree, chocolate is the best (especially during finals week tbh) šŸ˜€ Also, that tradition sounds completely AWESOME and if I didn’t live well over 1000 miles away, I WOULD TOTALLY JOIN (provided that, of course, you don’t think of me too much as a killjoy :P)

    Your’e from 2000?!?! Whoa, I get so surprised at how young (sorry, I hate it when people say that to me) you are and yet so extremely talented. I mean, you are literally from another millennia, haha. (Ok so I am from 1996, but whatever…)
    Love the popsicles! And the wonderful story. What I wouldn’t give to be 8 again šŸ˜‰

      Yepppp -my age ALMOST ALWAYS matches with the year -just subtract 2000 (omg it would be so cool to have been born in year 0). Anyways, thank you so much Josefine! I know right šŸ˜€
