Chewy Coconut Granola Bars {vegan, gluten free}

You know that thing that schools seem to love to do? Make lunch after a morning of fun, but amazingly difficult classes!

Fun classes? Yes, definitely!
Difficult classes? Of course!

But then the problem comes when you’re trying to solve a difficult geometry problems and you can’t think.


Grumble says your stomach.
Area of triangle ABC plus the area of triangle ABF should equal… Nope that doesn’t work. When’s lunch?
Stares hungrily at the clock. Oh, only an hour away!
Grumble, complains your stomach for the hundredth time.


And then it turns out that you can’t think about geometry anymore. You can only think of how the triangle outlined in red looks strikingly similar to a strawberry, the circle looks amazingly like the top of a sandwich, and the rectangle with quite a few auxiliary lines, looks like a lunch tray.

Studying takes brain power…

So, the obvious answer is bring something to eat as a snack during passing periods!


And that’s exactly what these granola bars are doing here! Simple, easy, delicious, and healthy, and they only take 30 minutes to make! (and now I sound like a television ad…)


Chewy Coconut Granola Bars {vegan, gluten free}


  • 3 tbsp coconut oil can sub butter if not vegan
  • 5 tbsp maple syrup honey <-- not vegan
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 3/4 cup oats old fashioned or quick, make sure they're gluten free if need be
  • 1 3/4 cup puffed rice cereal
  • 1/2 cup coconut I toasted mine


  1. Heat the coconut oil and maple syrup in a large pot until shimmering. Add in the vanilla extract and salt and continue to cook for 3 more minutes.
  2. Add in the rest of the ingredients and pat into a parchment paper lined, 13 by 9 inch pan. Sprinkle on chocolate.
  3. Place in the refrigerator to set for 30 minutes, or at room temperature, until set. Cut into preferred size (mine were 1 by 4.5 inches).

    yum! these look delicious. I make mine with brown rice syrup (also vegan) but haven’t tried the chocolate chips! Definitely will have to try that next time 🙂

    It’s been a long time since I needed something to eat between classes but I do remember those feelings. Our lunch was at 12:40pm and from 11am on, I was ready for food.

    I would have loved a granola bar like this. I haven’t made them since last year but it must be time again.
